Is it pizza night in your house but you want to try something different and new? We have made these Zucchini Pizza Strips so many times and I totally forgot to share the recipe until now! And of course my kids are always picky and want to choose different toppings for their pizzas… But with these Zucchini Pizza strips everyone can get involved, make thier own and get exactly what they want! WIN WIN!
To make it a family affair and something we can all do together, I prep the zucchinis and cut them into strips. I then sprinkle some salt on them and let them sit out for a few minutes while I prep the rest of the toppings. Zucchini hold a lot of water in them, so in order to make these a little more crunchy as the “pizza crust”, I allow the salt to pull some of the water out of them and then pat dry. I love using the Victoria White Linen Marinara Sauce from Costco because it has no added sugar. Sometimes sauces and dressings can have added sugar in them which isn't always necessary to make it tasty! I have used this brand multiple recipes and our family loves it!
We then lay out our zucchini strips on our pan, all of the yummy toppings lined up in bowls, and the oven preheating and ready to go, we then each take turns making out own creations! One of my kids wanted to top theirs with pepperonis, another with ground turkey, and the other with just plain cheese. So my littles were happy with making their own and I enjoyed spending time with them in the kitchen with me.
Zucchini Pizza Strips

Ingredients
5-6 whole zucchini squashes
½ cup Marinara Sauce (no sugar added)
⅔ cup Shredded cheese blend
Topping options:
Pepperoni (beef or turkey)
Ground turkey (cooked)
Ground Chicken (cooked)
Shredded Chicken (cooked)
Olives
Chopped Bell peppers
Mushrooms
Garlic cloves
Instructions
Preheat the oven to 400 degrees. Line a cookie sheet or baking pan with parchment paper or aluminum foil.
Slice each zucchini into 4 different slices long ways so that they make long slices with some thickness. Lay them out on top of some paper towels and sprinkle with some salt to draw out some of the water. After a few minutes and pat both sides dry. Optional: Sear strips for a minute or two on each side to make them more crispy on a frying pan over medium heat.
Prep your toppings. Here are a few ideas: pepperonis, ground beef (precooked), ground turkey (precooked), shredded chicken (precooked), bell peppers, olives, chopped mushrooms, chopped onions, garlic, and of course cheese!
Spray the pan with non-stick cooking spray and place the zucchini strips onto the pan. Top the strips with about a ½ tablespoon each of marinara sauce.
Next add your optional toppings as your desire and top each of the pizza strips with the shredded cheese.
Bake in the oven for 12 minutes or until the cheese is golden brown.
Remove from the oven and allow strips to cool for a few minutes before serving.
Notes
The cheese blend I use is a mexican or fiesta blend. Another option if you have time is to lightly sear both sides of the zucchini strips on a skillet pan prior to laying out onto the baking sheet and adding toppings.
