One Pan Dinner: Chicken & Brussel Sprouts


This one pan dinner is another favorite in our house and it only takes 25-30 mins from start to finish! And with only 5 ingredients, even better for any busy mom. To me, its the seasoning that makes all the difference in this easy dinner. Have your ever tried Trader Joe's "Everything but the Bagel Seasoning" or even heard of it? So many have shared how awesome it is on avocado toast or with their breakfast dish, but wait until you try it with the chicken and brussel sprouts!



Not sure if your kids would even try brussel sprouts? First of all in our house we call a lot of our vegetables that may seem unappedizing fun names to make it fun for the kids. Any guesses what they named the brussel sprouts? They named them "green balls"! The first time my daughter tried them was right around when the first Frozen movie came out and so all of our veggie names seemed to have some correlation with the movie. Her 2 year old self thought that the "green balls" looked just like snow balls so we went with it!



To this day, brussel sprouts are a surprisingly their favorite vegetable, but this Everything But the Bagel seasoning just totally kicks it up a notch! No joke, after I made this dish at the beginning of the week this week, all they have been asking for is "can we please have those green balls with those bagel sprinkles on them for dinner tonight?" My oldest, now 6, even asked for them for breakfast one morning!


One Pan Dinner: Chicken & Brussel Sprouts

Ingredients

  • 2 lbs of brussel sprouts

  • 4 Chicken Breasts

  • 2 tablespoons olive oil

  • Trader Joe’s Everything But the Bagel Seasoning

  • Lemon Juice

  • Optional: Crumbled goat cheese

  • Optional: Quinoa


Instructions

  1. Preheat oven to 400 degrees and line a pan with aluminum foil.

  2. Rinse brussel sprouts and pat dry. Cut them in halves or quarters. Drizzle 1 tbsp of olive oil over them and lightly toss in a medium bowl.  Place on pan and bake in the oven for 5 minutes.

  3. Fillet the chicken breasts so that they are thinner.  Coat the chicken on both sides with the leftover olive oil.

  4. Once the brussel sprouts are done, pull the pan out of the oven, raise the oven temperature to 425 and spread them out to the perimeter of the pan while making sure to flip them.  Place the filleted chicken breasts in the middle of the pan. Season the brussel sprouts and chicken with the Everything But the Bagel Seasoning to taste.

  5. Place the pan back into the oven and bake for an additional 16-18 minutes or until the chicken has reached the internal temperature of 165ºF. Make sure to flip the chicken around 8-9 mins through baking.

  6. Sprinkle lemon juice just before serving.

  7. Optional: Sprinkle crumbled goat cheese over top on a Stressless Lifestyle high fats day. Alternatively you can enjoy quinoa on the side during a high carb day in the Stressless Lifestyle.


Notes


Adjust the amount of cooking time depending on the thickness of the chicken breast.
