Pancakes are my jam! I love having pancakes on a good heavy lifting day in order to fuel those heavy weights which is every Saturday morning in our household and high carb day in the StressLess lifestyle. I have seen a lot of variations of protein pancakes as well as banana pancakes and when my daughter asked for some banana pancakes the other day I figured I would just give it a try. These pancakes are gluten free, grain free, and packed with protein with just a few easy ingredients. The sweetness is just right. I love topping mine with whipped cream while my husband tops his with some fresh berries.
I tripled this recipe in order to make enough for myself, husband and kiddos since the recipe is perfect for just one person which makes it easy when strictly tracking macros for yourself while also making an entire meal for the family!
Gluten Free Banana Protein Pancakes

1 Serving (4 to 5 4-inch pancakes)
Ingredients
1 banana
1 egg
1 scoop vanilla protein of your choice (our favorite is here)
1 teaspoon baking powder
1 teaspoon vanilla extract
water
Instructions
Heat up a flat pan or griddle to medium to low heat.
In a large bowl, mash up the banana with a fork as much as possible. Add in the egg and beat the banana and egg together.
Add in the protein powder (I use Devotion Nutrition’s Angel Food Cake flavor), baking powder, and vanilla.
Slowly add in water while mixing all of the ingredients together. It will depend on the protein powder you use on how much water will be needed. You will want the consistency of the batter to be just like any other pancake batter you would make from a pancake mix.
Spray pan with non-stick cooking spray and pour batter to your desired pancake size. Let cook for 2-3 minutes before flipping to the other side.
Let pancakes cool for a few minutes and enjoy! Top with whipped cream, berries, or enjoy them plain!
