It's football season! And since there are a lack of tailgates this year, here is an easy and fun side dish to prepare for game time at home. These Eggplant Parmesan dipping sticks are easy to make, gluten free, and grab and go for all to enjoy.
My son and I prepped these this past Sunday as we were watching our favorite NFL football team. It's so great to get the kids involved in the kitchen right a long with you so they can work on their fine motor skills with cutting, math with measuring, and cooking safety, and just having them working right along side me in the kitchen in general.
At first we didn't even really have a plan for our eggplant until he had asked if we could make a "dip station" where we put out all kinds of veggies, snacks, and various dips and the whole family just mixes and matches as they want. Then I had the idea of making these dipping sticks from an eggplant Parmesan recipe I was going to make and came up with the idea of these dipping sticks!

Eggplant Parmesan Dipping Sticks

Servings 2 - 4 people
Ingredients
1 eggplant
1 large egg
½ cup almond flour
½ cup grated parmesanÂ
1 tablespoon Italian seasoning
1 teaspoon Ground pepper
½ teaspoon Garlic Salt
½ marinara sauce
Instructions
Preheat the oven to 425 degrees or prepare airfryer as needed. Slice eggplant into ½ inch thick sticks
Mix all dry ingredients together in a shallow bowl. In a separate shallow bowl whisk egg.
Dip pre-cut sticks into egg and make sure they are completely covered. Then immediately dip them into the dry mixture again, making sure to completely cover them.
If baking, spray the pan first with non stick spray or olive oil. Place sticks onto pan and bake for 10 mins on each side. Â
If you have an air fryer, spray air fryer with nonstick spray or olive oil and place them into the air fryer. You will want to air fry them at 400 degrees for 8-10 minutes.
Once they are done cooking, allow them to cool. Place them into a bowl for serving and add a small side dish or cup with marinara sauce for dipping.Â
Notes
You may change up the almond flour with whole wheat flour or bread crumbs as well as any of the seasonings.
