One Pot Dinner: Chicken & Sweet Potato

Sweet potatoes are our carb source on the menu tonight with chicken as our lean protein.  This recipe has a little bit of a kick to it, but not too much that my kids still enjoyed it.  The little bit of spicy pairs so well with the sweetness of the sweet potato.

Monday in the Stressless Lifestyle means medium carbs and medium fat day if your carb cycling along with us!  This is an awesome way to get a delicious and healthy dinner full of whole foods on the table with little to no effort.  This "Stressless One Pot Dinner" (OPD) is my go to for meal prep time too since it can be kept in the fridge for up to 4 days and in the freezer for several months!



The sweet potato gives you a great source of carbohydrates and the chicken a great source of lean protein to keep your fat macros in check but finish out the day with the proteins that the typical American standard diet lacks. Pop some frozen broccoli into the microwave to steam it for a few minutes and viola, a tasty and colorful dinner!



So I usually pre-prep this meal by peeling and cubing up the sweet potatoes, cubing the chicken, and chopping up the onions while the big kids are still at school and my littlest is napping.  It only takes me a few minutes. Then I throw it all together in the instant pot and set it later as we are rushing to get out the door to dance classes for my oldest, onto taekwondo for my middlest, and then back for dance class pick up.  This way we get home and we are starving for dinner from our evening activities, it’s all warm and ready to go!



One Pot Dinner: Chicken & Sweet Potato

Ingredients

  • 2 large chicken breasts cubed (1 inch cubes) 

  • 1 pound cubed peeled sweet potato (1 inch cubes)

  • 1 cup chopped sweet onion

  • ¾ cup chicken broth

  • 1 tablespoon avocado oil

  • 1 tablespoon minced garlic

  • ½ tablespoon turmeric

  • 1 teaspoon cayenne pepper

  • ½ tablespoon dried thyme

  • 1 tsp pink himalayan salt


Instructions


  1. Drizzle your cooking oil into the Instant Pot bowl and press the Sauté Let the oil heat up for a minute or two minutes.

  2. Place the cubed chicken into the pot and use a wooden spoon or spatula to move it around. Add in chopped onion, the thyme, minced garlic, cayenne pepper, turmeric and salt. Let the chicken and onions cook for about 3 minutes, stirring occasionally so it cooks on all sides.

  3. Add the broth and use a wooden spoon to scrape off any pieces of chicken that have stuck to the bottom of the pot.

  4. Add the chopped sweet potatoes and stir to combine.

  5. Cancel the Sauté button and lock on the lid. Set the cooking time to 8 minutes on high pressure.

  6. When the cooking time is up, let the pressure release naturally for 10 minutes.

  7. Quick-release the remaining pressure. Remove the lid and stir.

You can serve this meal immediately OR us it as an opportunity to meal prep for high carb day or medium carb day in the Stressless Lifestyle by storing it in the refrigerator in a tightly-sealed container for up to 4 days. This dish will keep up to several months in the freezer.
