What's better than having some watermelon on a warm summer's day? How about change up that refreshing flavor with a bit of a twist! Try adding in some cucumber, a hint of mint, and a squeeze of lime! We decided to try this new watermelon & cucumber salad this year on the 4th of July and serve it with all of our summertime favorites. It was a hit for everyone in the family!
My kids also love to add Tajin to their watermelon and it added a little bit of saltiness and a slight kick to it all!

Servings Snack for 2-4 people
Ingredients
Fresh cut watermelon
2-3 cucumbers
Fresh MintÂ
1 lime
Optional: Tajin seasoning
Instructions
Cube watermelon into a large bowl. Slice cucumbers with or with our skin (depending on preference) and combine with watermelon.
Rinse fresh mint leaves and crush them into tiny pieces and add them to the bowl.
Squeeze one fresh lime over the bowl and carefully combine all ingredients.
Refrigerate for about 1-2 hours before serving. Carefully toss ingredients as needed.
Optional: For a Sweet & Salty option, sprinkle on some Tajin seasoning
Notes
Refrigerate any leftovers. They will be good for consumption for about 1-2 days.
